Potato Bread with Candied Bacon, Apple Chutney & Chive Sour Cream

Crispy, caramelised bacon drizzled with sweet syrup, piled on toasted potato bread with creamy chive sour cream and tangy chutney – a mouthwatering, irresistible bite of pure indulgence!

Caramelised Bacon:

  • 8 slices of Streaky Bacon
  • Maple/Golden Syrup

Chive Sour Cream:

  • 120ml Whipping Cream
  • Juice of ¼ of a Lemon
  • 45g Snipped or finely Chopped Chives
  • Salt and Ground White Pepper

Mix all the ingredients together and leave to infuse in a covered bowl for 1 hour in the fridge.

10 Minute Apple Chutney: (combine all ingredients together)

  • 1 Diced Bramley Apple
  • 50ml White Wine Vinegar
  • 50g White Sugar
  • Pinch of Cinnamon
  • Pinch of Nutmeg
  • 1 Finely Diced Onion
  • 25g Butter
  • 1 Clove of Crushed Garlic
  • Splash of Worcester Sauce

Method:
1. Place 8 Streaky Bacon slices on a roasting tray and cook in a moderate oven until dark brown and crispy.

2. Remove from the oven when ready and drizzle with Maple Syrup or Golden Syrup, leave to marinate for a few minutes then turn and mop up the syrup.

3. Add all Apple Chutney ingredients in a thick bottomed pan and cook out for 10 minutes until soft, cool and use as required.

4. Toast the Potato Bread until golden brown, spread with the Chive Sour Cream. Top with the bacon slices and then the Chutney.

Enjoy for Breakfast, as a great starter or an any time snack.
